Banana Bread

This would have to be the easiest banana bread recipe EVER!! 

Minus refined sugar, dairy and gluten but you wouldn't know it ;) 

 

Prep time: 15 mins

Bake time: 60 minutes

 

Ingredients:

1 cup fresh medjool dates (the softer the better!)

3 overripe bananas

3 eggs

1/3 cup tiger nut oil

250g tiger nut flour

2 teaspoon baking powder

1 teaspoon cinnamon

 

Method:

Preheat oven to 160°C. Grease a loaf tin and line with baking paper.

Place all the ingredients in a food processor and whizz to combine. 

Pour the mixture into the prepared loaf tin, tap on the bench a couple of times or smooth the top with a spoon or spatula.

Bake for 60 minutes at 160°C or until the skewer comes out clean.
