So many questions! Let us answer a few here:

How do I use? Does it work as a substitute for wheat flour?

Treat it like almond meal. It's basically a one for one swap in almond meal recipes (and a shit load more sustainable!!). It doesn't work the same as wheat flour so don't go trying to make a loaf of sourdough with it... but you could always do a blend of both.

What's the dealeo with allergens??

Short answer is there is none. No gluten, no nuts, no dairy, no eggs, no fish... ok you get it!

Could tiger nut flour be the most sustainable flour??

Quite possibly! It only takes about 387 litres of water to produce 1 kg of tiger nuts. Where we grow our tiger nuts in West Africa, only rain water is used to grow our tiger nuts.

Almonds take over 16,000 litres of water to produce 1kg. We'll leave you with that thought... Would also just like to clarify that over 16,000 litres of water to produce 1kg of almonds is NOT a typo!
